Many people have asked me for the recipes.. so here are most of them! Enjoy!
First, lets talk about breakfast... We ate some variation of eggs every day. We had scrambled, hard boiled, frittas, "Paleo- Fauxtmeal" and omelets. Even with the variation I am honestly all egged out.. I would be fine never having another egg in my life! Unfortunately, eggs are a really great protein source and therefore good to eat for breakfast. Along with eggs, we usually had some sort of fruit like a banana, strawberries, blackberries or blueberries and a strip or two of bacon on the side.

For Lunch we usually did left overs or some sort of salad.. Here were some of the recipes we found:
This broccoli salad recipe was awesome and I will definitely make again.Finally, here are the dinner recipes we had for the month of January.
Day 3: Grilled Salmon with avocado salsa
Day 4: Chicken and Lime Soup
Day 5: Flank Steak with Chimichurri Sauce
Day 6: Home made Fondu with Chicken and shrimp, potatoes, onions and broccoli- we used home made veggie broth instead of bouillon and put other spices besides jerk seasoning (which had added sugar)
Day 7: Lasagna chili- (Sorry this is a family secret recipe that you cant have!!) but most chili recipes are compliant.. just make sure the tomato sauce doesn't have any added sugar and no beans!
Day 8: Spaghetti Squash and Meatballs
Day 9: Lemon Rosemary Garlic Chicken
Day 10: Shrimp scampi with zoodles- (we replaced the wine with chicken broth)
Day 11: Pulled chicken in the crockpot with lettuce wraps- we also added peppers and onions in the crockpot
Day 12: Lemon Chicken with broccoli- instead of flour we used almond flour and cauliflower rice
Day 13: Crab Cake with garlic roasted green beans and cauliflower
Day 14: Cream of Asparagus soup
Day 15: Pot Roast with Mashed potatoes
Day 16: Walnut pesto stuffed chicken, green beans and mashed cauliflower
Day 17: Italian almond crusted salmon with broccoli and cauliflower rice- Sorry, I lost this recipe!
Day 18: Pulled pork and lettuce wraps
Day 19: Sausage, Potato and Spinach soup
Day 20: Salad and grilled chicken
Day 21: Fondu
Day 22: Zoodles and meat sauce- we found an organic spaghetti sauce that did not have added sugar and just added browned beef to it
Day 23: Pork Chops with apples and onions and cauliflower rice
Day 24: Beef Stew
Day 25: Spaghetti Squash and almond flour breaded chicken- we threw the spaghetti squash in the microwave for 10 minutes and just dipped chicken breast in egg and then in almond flour. Then cooked it in olive oil.
Day 26: Steak, asparagus and potatoes- cooked the steak on the stove in Ghee
Day 27: Salad from Sweet Tomatoes in Raleigh NC!
